We use \u003cem\u003e\u003cstrong\u003eOak Manor organic unbleached bread flour\u003c\/strong\u003e\u003c\/em\u003e to craft our breads.  Chemical applications including Glyphosate is used within conventional wheat production in Canada- so we don't play games with the flour we use - organic from Oak Manor only. \u003c\/p\u003e\n\u003cp\u003eOur bread is a 3 day process and we \u003cem\u003e\u003cstrong\u003ebake fresh\u003c\/strong\u003e\u003c\/em\u003e the day we pack your veggie baskets!  We feed the starter the evening before we make the loaves.  Day 2 we mix, stretch and fold, rise the dough and then shape the loaves.  We then refrigerate the loaves overnight, score and bake on day 3 :)\u003c\/p\u003e\n\u003cp\u003eCompared to commercial yeast bread sourdough is said to be easier to digest, lower glycemic impact, better nutrient absorption, support gut health as the fermentation process produces lactic acid and beneficial bacteria. And our kids love it.
